¿Qué onda, hermano? Caldo de pollo is the bowl that made the Mexican audience lean in. It ain’t a spice-rack soup. It’s chicken, onion, garlic, vegetables, and a broth that tastes like chicken.

The magic is at the table: lime, onion, cilantro, avocado, chile, rice, and warm tortillas. Everybody builds their own bowl.

How to Make Caldo de Pollo

  1. Put the chicken in a large pot. Cover with cold water. Add the onion, garlic, and a good pinch of salt. Bring to a boil.
  2. Skim the foam. Lower to a steady simmer. Cook about 30–40 minutes.
  3. Add carrot, potato, celery, corn, cilantro stems, and epazote. Simmer until the chicken is tender and the vegetables are cooked, about 25–35 minutes more.
  4. Add zucchini or chayote in the last 10–15 minutes so they don’t fall apart.
  5. Taste and salt again. The broth should taste like chicken, not like a spice rack.
  6. Serve the broth very hot with a piece of chicken and vegetables in each bowl. Everybody adds lime, onion, cilantro, avocado, and chile at the table. Rice goes in the bowl or on the side. Tortillas on the side.
