¿Qué onda, hermano? This might be the best little thing I learned for the Luchador kitchen. Real Mexican crema is cooler and tangier than sour cream, and you don’t need a special store trip if you can get heavy cream and Greek yogurt.
I stir the yogurt into the cream, let it sit out of the sun about 24 hours, then finish it with salt and lime. After that it belongs on everything — breakfast tacos, chilaquiles, pozole, nopales, and a big pile of chicharrones.

Ingredients (makes about 1 cup)
- 1 cup heavy cream
- 1 tablespoon Greek yogurt
- ¼ teaspoon salt
- 2 teaspoons lime juice
How to Make Mexican Crema
- Stir the Greek yogurt into the heavy cream until it’s smooth and no white streaks are left.
- Cover the bowl or jar loosely. Leave it on the countertop, out of the sun, for about 24 hours. It should thicken and pick up a gentle tang.
- After the 24 hours, stir in the salt and lime juice.
- Store in the fridge. It gets even better after it chills.
Holler Tips from Luchador Cletus
- Use a clean jar or bowl. This is a cultured cream, same idea as homemade crème fraîche.
- Keep it out of the sun and away from a hot stove. Room temp is the point. If your house is very warm, check it closer to 18–20 hours.
- If it smells sour in a rotten way, or looks moldy, throw it out and start over.
- Want it thicker? Give it another few hours on the counter before you add the lime, or chill it overnight.
- This is the one I dunked chicharrones in. Dangerous combo.
Variations to Keep It Fresh
- Extra lime: Add another squeeze if you like it brighter.
- Garlic crema: Stir in a tiny pinch of garlic powder after it chills.
- Chipotle crema: Mix in a little chopped chipotle in adobo.
- Herb crema: Cilantro or green onion at the end, right before serving.

The yogurt is the starter. Sitting out lets it thicken and culture so you get that real crema tang instead of plain cream. Lime and salt at the end keep it bright and tasting like the squeeze-bottle crema from a good taco spot — not Midwestern “muy queso” sour cream.

Storage & Make-Ahead Tips
Keep it in a clean jar in the fridge. It should last about 1 week. Stir before you use it. Don’t leave the finished crema back out on the counter after it’s been salted and limed — that part lives in the fridge.
