¿Qué onda, hermano? This ain’t milk gravy. This is Mexican brown gravy — a Tex-Mex chili gravy built on a roux, chili powder, cumin, garlic, and beef broth.
Cletus walked off looking for milk. Luchador stayed in the skillet and made this instead. After filming, it was so delicious I wasn’t even mad about the empty jug.

Ingredients (makes about 2–3 cups)
- ¼ cup bacon fat, lard, or vegetable oil
- ¼ cup all-purpose flour
- 2 Tbsp chili powder (good-quality Tex-Mex style)
- 2 tsp ground cumin
- 2 tsp garlic powder
- 1 tsp onion powder
- ½ tsp Mexican oregano (or regular oregano)
- ¼–½ tsp kosher salt (taste at the end)
- ½ tsp black pepper
- 2 cups beef broth (low-sodium preferred)
How to Make Mexican Brown Gravy
- Heat the bacon fat, lard, or oil in a skillet over medium heat.
- Whisk in the flour and cook 2–3 minutes, stirring, until it smells toasty and turns a light brown. Don’t walk off and burn it.
- Stir in the chili powder, cumin, garlic powder, onion powder, Mexican oregano, salt, and black pepper. Let the spices bloom in the roux about 30–45 seconds.
- Slowly whisk in the beef broth. Start with a splash to make a paste, then add the rest so it stays smooth.
- Simmer 5–8 minutes, whisking now and then, until it thickens into gravy.
- Taste and adjust salt. If it’s too thick, add a splash more broth. If it’s too thin, let it bubble a little longer.
Holler Tips from Luchador Cletus
- Bacon fat is the holler move. Lard is classic. Oil works if that’s what you have.
- Use a chili powder you’d actually put on tacos. Cheap dusty chili powder tastes dusty.
- Mexican oregano is a little different from Italian oregano — use it if you have it.
- Low-sodium broth lets you control the salt. Taste at the end, not the beginning.
- This gravy thickens as it sits. Loosen it with broth when you reheat.
Variations to Keep It Fresh
- Hotter: Add cayenne or a spoon of chipotle in adobo.
- Deeper: A splash of coffee or a pinch of cocoa in the simmer.
- Onion gravy style: Cook a little diced onion in the fat before the flour.
- Enchilada gravy: Thin it slightly and pour over rolled tortillas.

Same gravy logic as the holler: fat + flour + liquid. The difference is the chile and cumin instead of black pepper and milk. That’s why it works on steak fingers, breakfast plates, and enchiladas without tasting like two different kitchens fighting.

Storage & Make-Ahead Tips
Cool it and keep it in the fridge 3–4 days. Reheat gentle on the stove with a splash of broth. It also freezes well in a jar for about a month.
