Every kid loved peanut butter boppers growing up. It was one of those only-every-now-and-then treats, but with this recipe it can be an anytime treat for you and your family.

Peanut butter, chocolate, and that perfect crunch — what’s not to love? It takes me straight back to the ’80s, sitting in front of the TV after school with a cold glass of milk, watching cartoons while sneaking one (or three) of these sweet, salty bites. Simple, nostalgic, and downright addictive.

Ingredients

  • For the peanut butter filling: ½ cup (about 130 g) creamy peanut butter (smooth, not natural/separated), 3 tablespoons (42 g) butter, softened, 1¼ cups (150–160 g) powdered sugar
  • For the crunchy coating: Large amount of crushed rice puff cereal, granola, or crushed graham crackers + ¼ cup (about 45 g) semisweet miniature chocolate chips
  • For dipping: 5 oz (about 140–150 g) chocolate-flavored candy coating (or almond bark; or melted semisweet chocolate + 1–2 tsp neutral oil)

How to Make Peanut Butter Boppers

  1. 1. In a large bowl, beat the peanut butter and softened butter with an electric mixer on medium speed until smooth and well blended (about 1–2 minutes).
  2. 2. Gradually add the powdered sugar on low speed until fully incorporated and the mixture forms a dough-like consistency. If it’s too crumbly, knead by hand briefly.
  3. 3. Shape the mixture into a ball, then divide in half. Roll each half into a 12-inch log (about 1½ inches thick). Wrap and chill in the fridge for 15–30 minutes to firm up.
  4. 4. Cut each log into 6 equal pieces (2-inch rounds/logs). You can leave them as short logs or gently shape into slightly rounded bites.
  5. 5. In a shallow bowl or on a plate, mix the crushed cereal/granola/graham crackers with the mini chocolate chips to create the crunchy coating.
  6. 6. Melt the chocolate candy coating according to package directions (microwave in 30-second bursts, stirring until smooth).
  7. 7. Dip each peanut butter piece into the melted chocolate, coating fully or mostly (use a fork to lift and let excess drip off). Immediately roll in the crunchy mixture. Place on a parchment-lined baking sheet.
  8. 8. Let set at room temperature or chill in the fridge for 15–30 minutes until the chocolate hardens.
