Chicken Mushroom Gravy is easy, ready in no time, and is delicious comfort food.
With just a few pantry staples and some chicken, it comes together fast. It doesn’t matter if you use chicken thighs or chicken breasts — I used both. I personally like chicken thighs better; they have more flavor overall and don’t dry out.
Ingredients (makes 6 servings)
- Chicken: 4 boneless chicken breasts or thighs
- Salt, black pepper, and a pinch of garlic powder or paprika
- 2–3 tbsp butter (divided) + 1 tbsp oil for searing
- For the gravy: 8 oz mushrooms, sliced
- 1 small onion, finely diced
- 2–3 garlic cloves, minced
- ¼ cup all-purpose flour
- 1½ cups chicken broth
- ½–¾ cup whole milk or heavy cream
How to Make Cletus's Chicken Mushroom Gravy
- 1. Season and sear the chicken in a hot skillet with a little oil + 1 tbsp butter until golden on both sides. Remove and set aside.
- 2. In the same skillet, melt the remaining butter. Sauté the diced onion and mushrooms until soft and golden (4–5 minutes).
- 3. Add the garlic and cook for 30 seconds. Sprinkle in the flour and stir 1–2 minutes to make a roux. Slowly whisk in the chicken broth, scraping up all those flavorful bits. Then whisk in the milk or cream until smooth. Let it bubble and thicken (2–4 minutes).
- 4. Season well with salt, lots of black pepper, and any herbs you like.
- 5. Nestle the chicken back in the skillet, spoon the thick gravy over it, cover, and simmer on low for 5–8 minutes until the chicken is cooked through and everything is smothered and happy.

- Make it ahead — this gravy tastes even better the next day.
- Serve over hot biscuits, mashed potatoes, rice, or egg noodles.
- Want it thicker? Add a splash more flour. Want it creamier? Use heavy cream.
- Leftovers reheat great on the stovetop with a splash of milk.
