Coca-Cola Meatballs

These Coca-Cola Meatballs are pure holler comfort with a sweet, sticky twist. The Coke glaze turns ordinary meatballs into something special — glossy, tangy, and downright addictive.

My grandma used to make something similar for church potlucks. She’d always say, “If it’s sweet and sticky, folks will eat it.” She was right. I took her idea, added my own Coca-Cola Bubba spin, and now these meatballs are a regular request. Bigfoot has even been known to sneak a few off the table when I’m not looking — he likes the sweet stuff too.

Easy

Ingredients (makes 40-50 small meatballs)

  • 2 lbs ground beef (80/20 recommended)
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 small onion, finely chopped
  • 2-3 garlic cloves, minced
  • ¼ cup milk
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning (optional)

How to Make Coca-Cola Meatballs

  1. 1. Preheat oven to 400°F. Mix all meatball ingredients in a large bowl until just combined. Do not overmix.
  2. 2. Roll into small (1-1½ tbsp) meatballs. Place on a foil-lined baking sheet.
  3. 3. Bake 18-22 minutes until cooked through (internal temp 160°F).
  4. 4. While baking, make the Coca-Cola sauce: Mix 1 cup Coca-Cola, 1 cup BBQ sauce, and optional ½ cup grape jelly or brown sugar in a skillet or slow cooker.
  5. 5. Add cooked meatballs to the sauce. Simmer 10-15 minutes until the sauce is thick and glossy.

Cletus’s Kitchen Wisdom – Why This Works

The Coca-Cola breaks down into a beautiful sticky glaze when simmered with BBQ sauce. Baking the meatballs first keeps them juicy and prevents them from falling apart in the sauce. The combination of sweet Coke + savory BBQ creates that perfect sweet-and-tangy balance everyone fights over.

Storage & Make-Ahead Tips

These freeze great — make a double batch. Store cooked meatballs in sauce in the fridge for 3 days or freeze for up to 2 months. Reheat gently on the stove or in the slow cooker.
