Ingredients
- 2 (12 oz.) bags semisweet chocolate chips
- 1 cup creamy peanut butter
- 4 tsp. coconut oil
- 1 tsp. vanilla extract
- 10 oz. chow mein noodles
- Flaky salt (optional, for topping)

- 1. Place the chocolate chips, peanut butter, coconut oil, and vanilla extract in a large microwave-safe bowl.
- 2. Microwave on high for 1 minute, then stir well. Continue microwaving in 30-second bursts, stirring after each, until everything is completely melted and smooth.
- 3. Add the chow mein noodles to the melted chocolate mixture. Stir gently until all the noodles are well coated.
- 4. Drop tablespoonfuls onto a parchment paper-lined baking sheet. Sprinkle with flaky salt if desired.
